Food – Potato & Leek Soup

Winter is my favourite time of the year – it allows you to layer up, get cosy with some blankets on the couch and make soup. I love soup. This is is hearty winter soup – filling and very very tasty.

INGREDIENTS:

1 Onion – finely diced
4 Leeks chopped (only the white & light green)
3 Medium sized potatoes peeled and cubed
3 Tablespoons of Butter
700ml of Vegetable Stock
Salt & Pepper

METHOD

1. Saute the onion and leeks together in the butter until soft and translucent
2. Add the Potatoes and stock
3. Simmer gently for half an hour
4. Blend the soup (if desired)
5. Season to taste.
