Food – Lemon Almond Polenta Cake

 

The world is changing and a lot of people are not eating Gluten in their day to day to life. This is a gluten free cake that everyone can enjoy. I have to be honest that is one of my favourite cakes as it is moist and has a slightly grainy texture. It is amazing – try it out

Ingredients:

  • 450g Butter (softened)
  • 450g Castor Sugar
  • 450g Ground Almonds
  • 2 teaspoons vanilla essence
  • 6 Eggs
  • Zest of 4 lemons
  • Juice of 1 lemon
  • 225g Polenta
  • 1 1/2 teaspoon baking powder

Method:

  1. Beat butter and sugar together until pale and light.
  2. Add vanilla and beat well.
  3. Add ground almonds and stir well.
  4. Beat in eggs one at a time.
  5. Fold in lemon zest, lemon juice, polenta and baking powder.
  6. Butter and flour a 30cm tin.
  7. Spoon the mixture into the tin and bake at 60 degrees for an hour or until cooked through.
